From Colombia
The paisa and montañera platters, sancocho de costilla, mondongo and ajiaco, arepas griddled to order, pandebono, and fruit shakes made with lulo, guanábana and maracuyá.
From the Caribbean
Haitian griots and lalo, acras of fried malanga, patties filled with chicken, herring or codfish, and lambi royal — conch, charbroiled the way it should be.
